In Part One of her Sneaky Vegetable Series, Jessica will be making a tangy Alfredo sauce with a goat cheese base. Goat cheese has fewer calories and lower fat than regular cheese and is more easily digestible than cow’s milk cheese, plus it has a lovely light tang that cuts through the usual richness of an Alfredo. Enhanced by roasted red peppers as well as garlic and onions, this sauce is delicious and versatile, and can easily be made in 30-40 minutes with just a few basic cooking skills!
